Banana Peanut Butter Bark
Creamy peanut butter bark studded with sweet banana slices and a drizzle of dark chocolate. A naturally sweet, protein-packed treat that tastes like frozen nostalgia!
Ingredients:
3 small bananas, sliced
1/2 cup natural peanut butter
2/3 cup chocolate chips (I prefer dark)
1 tsp coconut oil
flaky sea salt
Grab a small baking sheet and line it with parchment paper. Arrange your banana slices in rows, creating a rectangle shape. Make sure the slices are touching each other—no gaps!
Spread a layer of peanut butter over the bananas using the back of a spoon. Don't stress about making it perfect; just cover them evenly. Stick the whole thing in the freezer for about 20 minutes so everything firms up.
While that's chilling, melt your chocolate chips and coconut oil together. I like using the microwave—just heat in 30-second bursts, stirring in between, until smooth. It usually takes about 1-2 minutes total.
Pull the baking sheet from the freezer and drizzle the melted chocolate over the peanut butter layer. You can spread it into an even layer with a spoon if you want full coverage, or keep it drippy for a more rustic look. Sprinkle flaky sea salt on top (don't skip this—it makes everything taste amazing!).
Pop it back in the freezer for another 20 minutes or until the chocolate hardens completely. Once it's set, break it into pieces with your hands or cut it into neat squares with a knife.
Enjoy immediately, or store leftovers in a freezer-safe container for up to a month. Trust me, it won't last that long!
